I’m kinda new and idk what race to choose for armour and weapon specifications

Any. No race gives a damage bonus. These are the bonuses each race gets (in Inquisition):
Dwarf: +25% magic defense
Elf: +25% ranged defense
Human: +1 ability point
Qunari: +10% physical damage resistance.
The damage resistance doesn't really mean much. As a warrior, guard will be absorbing the damage. You could have 99.9% damage resistance, but that wouldn't matter if all incoming damage was absorbed by guard.
As a melee character, you'll be facing more melee or aoe attacks than ranged attacks. Magic defense is slightly more useful, in theory anyway. I never actually noticed a difference.
The most useful racial bonus is, arguably, the 1 extra ability point humans get. But even that is not enough of an advantage to be a determining factor. Inquisition is fairly easily, especially on the lower difficulties. Just pick whatever race you want.

That isn’t entirely correct. Qunari’s do the most damage due to their vitaars that the other races don’t have access too. But it isn’t an overwhelming difference of damage.

I found a place that gives heaps of tier 3 schematics but the armour is 250 defence at any level but can only be a dwarf I’m not sure if I should start again and be a warrior dwarf

^Well, I never both with maxing stats, even in nightmare. As I said, as a warrior guard will be absorbing the damage. Extra armor is nice, but it's nothing to obsess over.
However, if you're just starting the game (like less than a few hours in) and you want to be a dwarf for whatever reason, go for it.

It's always possible to have multiple play throughs going with different characters. I do that all the time with the DA games. There's always more than one way to make any important game decisions, so you can play through with a character who's making different choices.
A warrior's guard ability is really more important than armor ranking. Armor ranking matters more with characters who can't generate guard, like rogues and mages. So, what you want to do here is to create a character rather than creating a warrior.

One thing to remember about the Elven ranged resistance, is that it applies to most ranged attacks, ie. not just against archers but against ranged magical/elemental attacks too. Ranged attacks, of all types can be some of the most annoying and awkward to deal with. Especially at higher difficulty levels. As a warrior you'll be fine against most physical attacks, especially melee physical attacks, but you're still vulnerable to magic/elemental attacks. Therefore the best choice for a warrior class, and for most classes generally, is elf or dwarf. For ranged classes, elf is probably best, as you'll most frequently get attacked at range. For all other classes, it's a choice between elf and dwarf. The 1 bonus ability point of humans isn't as good as it sounds. It gives you a marginal advantage for the first few levels, nothing more. Bear in mind that you can only have 8 active abilities. By mid game you'll have enough points to make a powerful build, with or without that extra point. By endgame it becomes even more redundant. You can get 31 skill points by the endgame. Possibly well before then. Whichever race you choose, the effect won't be huge but can have a small but significant effect at lower levels or higher difficulty settings. The effect on the story is more significant but not overly so. More in terms of some different sidequests, romance options and dialogue options. There are a couple of quests where your race can have a slight positive or negative effect but nothing that stops you from completing the quests as a different race. Overall, you're probably best just picking the race that most appeals to you, or which fits any roleplay ideas you may have. If you ARE wanting to min-max, to the max, then either elf or dwarf will give you a very slight edge, but nothing to write home about. :)
