"This is a super-easy salad with knock-em-dead flavours! Great for brunch or a light meal. This makes 4 appetizer or 'salad' servings, but it can serve 2 as a main course."

ingredients
- 1⁄4 cup sour cream
- 1⁄4 cup olive oil
- 3 tablespoons fresh lemon juice
- 2 tablespoons Dijon mustard
- 1 tablespoon dry white wine
- 1⁄4 teaspoon pepper
- 1 (1/2 lb) package fresh cheese tortellini
- 1 tablespoon olive oil
- 1⁄2 cup thinly sliced red onion
- 1⁄4 cup chopped green onion top
- 1⁄4 cup chopped fresh dill
- 2 tablespoons drained capers
- 4 ounces smoked salmon, cut into thin strips

directions
- Whisk sour cream, oil, juice, Dijon, wine and pepper together.
- Chill until ready to use.
- Cook tortellini until al dente; drain.
- Transfer to bowl.
- Add 1 tablespoon of oil and toss to coat.
- Add onion, onion tops, dill and capers; toss again.
- Cool.
- Add salmon and enough dressing to coat and toss well.
- (can be made 8 hours ahead; cover and chill.).

This was good! When I tasted the dressing I thought it was going to be terrible, but when it all came together it was very yummy! I think it tasted better room temp the first day than cold the second. Oh, and I had a beer with this (Blue Moon)- the lemony taste from the dish got stuck in the back of my throat for about 20 minutes and made it the most delicious beer I've ever had!

fabulous salad! though, i didn't like smoked salmon as much i had hoped i would... not evelyn's fault though! the dressing (i omitted the white wine), capers, tortellini (i used whole wheat), and red onions were delish, though! i just ate around the salmon a bit... ;)tagged and made for the think pink tag game in honor of breast cancer awareness month.

I thought the dressing was a little astringent, so would next time either leave out one tablespoon of the lemon juice or omit the wine. There was plenty of dressing too, so perhaps I should have just used less? Anyway, the salad was a nice filling lunch!

Evelyn...I loved this...I made this & was hoping my boyfriend wouldn't like it that much...I was wrong!! I omitted the capers because I don't care for them but otherwise went right by the recipe.

This was excellent. Great flavor on the dressing! I actually didn't have any white wine on hand, and I made a mental note to splash a touch of white wine vinegar in, but I forgot. And it was still wonderful. I also used low fat sour cream and spinach and cheese filled tortellini since that's what I had in the pantry. One note: I used dried dill for this because it was the ONLY ingredient I didn't have, and I didn't have time to go back out to the store. The dried dill still gave the dish that nice dill flavor, BUT I know this recipe would knocked my socks off with the fresh! Thanks Evelyn, will make this again!

I moved out here many, many years ago from Ottawa, Canada - so I am blessed in having two wonderful heritages!I suffer from compulsive obsessive behaviour with regard to food and my psychiatrist thought it would be a good idea to find a 'society' where many have the same problem and try to find a cure.So far, I've copied a couple of thousand recipes from this site and my psychiatrist has thrown the towel in and refuses to answer the phone when I call.What did I do wrong?Got 3 kids that keep me on the go - 10 and under at this point (2008) - I may not get round to updating this for a few years, so you'll have to do your own maths.I teach English full-time and Greek Cookery part-time. I would like to make the cooking part of it full-time and the English Grammar part of it part-time. That's all for now.
