In this post I’ll be sharing a Cheesy Ground Beef and Cabbage Casserole Recipe.
This easy recipe is another delicious installment in my “back to the basics” recipe series. This is one of those tasty clean out the fridge shop the pantry dinners that your family will love.
A few weeks back I found myself with a refrigerator drawer full of produce that needed to be used up because it was on the brink of going bad. I really hate wasting food.
So I pulled everything out of the fridge that I needed to use to look it over and come up with something to make.
Sure, I could have made a few different sides with everything that I had but I decided to throw it all together in a mish-mash of flavors casserole.
I saw no reason why it shouldn’t turn out well but there was a little part of me saying to myself “I hope this is gonna be good“. Well, it was. Delicious in fact.
We enjoyed the casserole for two meals. I think it might have been even better the next day after I re-heated it in the oven.
Ground Beef and Cabbage Recipe
This creamy hamburger and vegetable casserole was delicious topped with cheese. If I had it to do over again, I might have used even more cheese.
That is just the cheese-aholic in me talking though. I’m sure it was cheesy enough for the mister. He’s not quite the crazed cheese lover that I am.
Did you know that there is an official word for someone who loves cheese? It is turophile. Who knew? I’ll just keep calling myself a cheese-aholic though.
Clean Out the Fridge Casserole
So here’s what I had on hand at the time to make this meal:
- Ground Beef
- Cabbage
- An Onion (who was feeling a bit camera shy and didn’t make it in the photo)
- Sweet Bell Peppers
- Mushrooms
- Cheese
- Cream of Mushroom Condensed Soup
Of course you could add or take away and adjust the ingredients to what you happen to have in your pantry at the time.
Chopped tomatoes, grated carrots, celery would also work great if you have it on hand and you could use any cream of something soup for cooking casseroles.

Shop the Pantry Meal
The hamburger went into a skillet to mince up and brown until done. While this was happening I chopped up the veggies and checked on the ground beef occasionally as it cooked.
Cabbage, Beef & Veggie Casserole
Drain the cooked ground beef very well and add it to a large mixing bowl along with the chopped vegetables.
I also added half of my grated cheddar cheese to the filling mix.
Easy Beef and Cabbage Casserole
Next thing to go into this beef and cabbage casserole mix was the creamed soup and some milk.
Season everything to your liking, I just used some salt and pepper, the gave it a stir to combine. Feel free to add other seasonings that you family enjoys.
Hamburger Cabbage Casserole
The ground beef and cabbage casserole filling went into a large rectangle baking dish then got topped with the remaining cheese and into a hot oven it went to bake until hot and bubbly.

Waste Not Want Not Supper
A delicious easy fix meal and no food waste. I would call that a success.
Cheesy Ground Beef and Cabbage Casserole Recipe

A delicious clean out the fridge shop the pantry dinner made with what you have on hand to make this delicious cheesy ground beef and cabbage casserole with other vegetables.

Total Time1 hour 15 minutes
Ingredients
- 2 lbs. Ground Beef: cooked, crumbled and drained well
- 1 Small Head of Cabbage, thinly sliced
- 1 Onion, diced
- 3 Bell Peppers, diced (I had red, orange & green - any color will do)
- 1 cup of Mushrooms, sliced
- 8 oz. Sharp Cheddar Cheese, grated and divided
- 10½ oz. Cream of Mushroom Condensed Soup
- ½ c. Milk
- Salt and Pepper, to taste
Instructions
- Preheat oven to 350°F.
- In a large mixing bowl: combine the cooked ground beef, cabbage, vegetables and half of the shredded cheese. Next add the cream of mushroom soup, milk and season with salt and pepper; stir to combine.
- Transfer the casserole mixture to a rectangle baking dish and top with the remaining shredded cheese.
- Bake for 1 Hour until hot and bubbly.
Notes
The leftover ground beef and cabbage casserole can be re-heated the next day in a 350°F oven until hot.
