It's hard to say which one is better as they're all good in their own ways, so I'll give a slightly in-depth review of each.
Gummy Star
For many people, the best is Gummy Star. It gives tons of honey (along with some gumdrops) when it ends and boosts your goo collection a lot. It's also very powerful with secondary passives like Star Shower or Guiding Star. However, it requires the use of gumdrops and rng to activate it, making it expensive as gumdrops aren't easy to keep en masse. It's best to save it for boosts as that's when you'll get the most bang for your buck. Since White hives tend to focus on boosting, this is definitely the best passive for them.
Pop Star
Pop Star gives lots of capacity off the bat as well as tons of extra blue pollen and convert rate at hive as you pop bubbles. The downside is that you really need to focus on blue in order to get enough Tadpoles/Ninjas in order to stack Bubble Bloat. You'd also likely need another person to help out when stacking Bubble Bloat, as they can pop your bubbles and vice versa, giving both of you the buff. Stacking bloat, even with other people, takes hours upon hours to do, so if you're impatient this probably isn't for you.
Scorching Star
Scorching Star gives some red capacity as well as red pollen, instant flame conversion, convert rate, and conversion links. Even without any flames, the conversion links and convert rate can easily get you 10-20m honey. If you're wearing Demon Mask and have tons of Spicy Bees, you can easily get a massive Scorching Star and along with it tons of red pollen and conversion, giving you upwards of 60m honey (and that's only with me having 2 Spicy Bees). Scorching Star is also good for every other type of hive. It's good for Red Hives because of obvious reasons. It's good for white hives because Honey Marks from all of the Carpenter Bees they have also multiply convert rate and give more conversion links, giving you tons of conversion and links. It's good for blue, surprisingly, because of Diamond Drain. Diamond Drain converts more based off of your total hive conversion, which even without a single flame (like most blue hives don't have), you still have a base x2 convert rate, essentially doubling the power of your Diamond Drain, not to mention that a lot of Blue Bees have good conversion in the first place. It's good for mixed hives too, because mixed hives have the best of both (or I suppose I should say all) worlds.
Star Shower
Every 40th boost token summons 10 falling stars in the field that collect and instantly convert pollen, and if you catch them, converts pollen and gives Inspire. On its own, the passive is mediocre at best, but serves very well as a side passive for Supreme Star Amulets. You can also get it on Diamond Star Amulets with a theoretical 1/200 chance per Diamond Star Amulet generated. The issues with this passive are that the stars are hard to catch and tend to be blocked by obstacles in the field (especially noticeable in fields like Pine Tree Forest), and the conversion isn't that great (easily outshone by Inspire Coconuts, which the stars don't help you with). However, if you get lucky and manage to catch a lot, that's a free 4-6 Inspire. If you can time that with a Gummy Morph (and even Gummy Star if you get really lucky), you can collect tons of pollen, goo, honey, whatever. Basically, it's a mediocre passive but great as a secondary passive as it can activate very often compared to other stars and boosts them a lot.
Guiding Star
This passive used to be the worst passive by far. Now it's pretty decent, especially as, similar to Star Shower, a secondary passive. Like Star Shower, Guiding Star needs boost tokens, but it needs over 6x as many. 250 Boost Tokens to be exact. It also has a cooldown of 5 minutes. Why would it need so many tokens to activate? That's because it gives x4 capacity and x2 pollen to all players in the field and pollinates tons of flowers every 5 seconds... for 10 minutes. This makes it amazing for White Hives as they can simply activate the passive and do a boost in that field. The drawback to this, however, is that it only chooses a field from your 5 least collected fields. This means that it usually goes to fields like Stump or Mushroom. How do you get around this, though? You make an alt account. If you have the patience to get an alt account all the way to Guiding Star, you can collect from fields you don't want to have the Guiding Star on the alt so that the Guiding Star can go to fields you do want like Coconut, Pepper, Pine Tree Forest, etc. If you don't want to do that, you still can use the other fields it goes to, as it is still a nice boost to make it worth grinding in those fields. And one more thing, you can also get it on Diamond Star Amulets with a theoretical 1/200 chance.
Star Saw
This is a very awkward passive. Like Gummy Star, you need to use items for this one. However, you need to use Stingers. Stingers aren't easy to come by. However, with Star Saw, it'll refund every 3rd Stinger you use, so that's pretty good. On that 3rd stinger, it also summons a Star Saw that swings around you rapidly dealing 25% of your total hive's attack to any mobs hit for 30 seconds. It also collects tokens and collects and instantly converts pollen that increases the more total hive attack you have. It also converts pollen in your container equal to the amount it collects. It all does that 10 times a second. This passive is good for things like the Ant Challenge or Stick Bug Challenge, and even regular grinding because of its op collection and conversion. The drawback is that it'll just suck up your Stingers so fast. Total hive attack is very important to its power, so Red hives benefit from this passive a ton, as Spicy Bees insanely boost your total hive attack with Inferno with both the summoned Fire Bees and Flame Heat. Blue hives however will suffer a lot with this as, on average, Blue hives are terrible at combat. Frogs don't count towards total hive attack, and Vicious Bee, while good at combat, the spikes aren't part of the hive and therefore aren't counted either.
Conclusion
Gummy Star, Pop Star, and Scorching Star are the stars you want. Star Shower, Guiding Star, and Star Saw are better off as secondary passives. Each has their own strengths and weaknesses, so it really depends on your hive and playstyle. Maybe you like playing for a half hour a day, so Gummy Star and boosting is for you. Perhaps you like playing for hours today, either out of boredom or because you just love the game. In that case, Pop Star is for you. If you'd like to just get honey upfront without much work, Scorching Star is for you. Star Shower is good for any hive, especially White hives because of Gummy Morph. Guiding Star is best for mixed hives as they can go to any field and still be good, especially if they have Fuzzy Bee as they can power-up any field. Star Saw is best for Red hives, as they have tons of total hive attack and Red hives are designed for fighting in the first place.
