I assume you have resource constraints or team need big learning curve on either functional or technical side.In my experience there are two approaches, first identifying features/ product areas absolutely required. Rest of the features can be followed up later.Second within each feature, identify absolutely required functionality.Thus we first defer good to have or nice to have components and then in must have components we defer good to have or nice to have features.

More often than not, you are in a workplace with peers and a boss. If you cannot get everything done that you need to be done within the allotted time you have for work, then you are being given too many tasks. If you have people that you can delegate tasks to, I would just approach him/her and ask if they can do you a favor and do a task so that you can get your task that is a higher priority done.
