These Trader Joe’s Sweet Corn Ravioli with Burrata are one of my favorite seasonal items. I serve them with a delicious light and creamy lemon basil cream sauce that’s super easy to make and perfect for summer. The whole thing is ready in under 30 minutes and is absolutely divine!

What is Trader Joe’s Sweet Corn Ravioli with Lemon Basil Cream Sauce?

Sweet Corn Ravioli with Lemon Basil Cream Sauce is a creamy pasta dish that combines the flavors of sweet corn, fresh herbs, and a creamy sauce.

These seasonal raviolis are from Trader Joe's and they're stuffed with sweet corn, burrata basil. They're one of my favorite seasonal items from Trader Joe's.

To emphasize the fresh, vibrant flavors of summer, they're cooked until tender and then tossed in a creamy sauce made with lemon, basil, parmesan and cream.

The result is a bright, light and flavorful dish where the sweetness of the corn ravioli complements the tangy lemon and aromatic basil in the creamy sauce.

This combination of flavors creates a harmonious and satisfying pasta dish that is so dang good!

I like to plate mine with a little bit of grated Parmesan cheese, fresh basil leaves, flaky salt and fresh cracked pepper.

Ingredients and Substitutions

  • Trader Joe’s Sweet Corn Ravioli- This seasonal pasta works wonders for this dish but if you can't find it, you can use another ravioli of your choice.
  • Salty butter - Unsalted butter works too just add a pinch of salt. You could also use olive oil.
  • Garlic Cloves- Fresh garlic is best but shallots work, too.
  • Heavy Cream - Heavy cream is def the most recommended but if you needed to use another type of milk, you might need to make a roux to thicken it up.
  • Lemon - Since you need both the juice and the zest from this, there is no real substitution.
  • Parmigiano - Grana Padano, Pecorino, or another hard aged Italian cheese will work.
  • Basil - Fresh basil adds so much flavor but I've gotten a few people who told me tarragon also works in this recipe.

How to make Trader Joe’s Sweet Corn Ravioli with Lemon Basil Cream Sauce

Since raviolis cook so fast, I love to serve them with really simple, super fast sauces. So here's how you make it!

Begin by getting some pasta water boiling for Ravioli.

Next, add butter to a heavy bottomed sauce pan. I'm using the new Our Place Always Pan 2.0 and I love it!

Let it melt then add the garlic and cook down for about 2-3 minutes until soft and fragrant.

Next, add the heavy creamy, lemon zest and parmigiano and stir.

Add in half of the basil and let the sauce simmer and reduce until the pasta is ready.

Once the sauce is thickening, pour the uncooked ravioli in the boiling salted water and cook for a few minutes - being sure to save some pasta water to the side in case you need it at the end.

Now remove the basil and add the strained, cooked ravioli, the juice from half a lemon, the remaining basil, flaky salt and fresh cracked pepper then stir.

Cook for one more minute over low heat as the pasta finishes cooking in the sauce.

If it’s dry, add a lil reserved pasta water until the sauce is silky.

Taste and season with salt, pepper and more lemon juice if needed. Enjoy!

Ingredients

  • 2 8 oz boxes Trader Joe’s Sweet Corn Ravioli
  • 3 tablespoon Salty Butter
  • 4 Cloves Garlic finely diced
  • 1 Cup Heavy Cream
  • 1 Lemon Lemon Zest
  • ½ Cup Parmigiano
  • ½ Lemon Juiced
  • 4 tablespoon Basil divided
  • Kosher Salt and Fresh Cracked Pepper to taste

Instructions

  • Get salted pasta water boiling for Ravioli.

  • Add butter to a heavy bottomed sauce pan over medium heat and let it melt then add the garlic and cook down for about 2-3 minutes until soft and fragrant.

  • Add heavy creamy, lemon zest and parm and stir.

  • Add in half of the basil turn the heat down to medium low. Let the sauce simmer and reduce until the pasta is ready.

  • Pour the ravioli in the boiling salted water and cook for a few minutes - being sure to save some pasta water to the side in case you need it at the end.

  • Remove the basil and strain the raviolis -- being sure to save some of the pasta water in case you need it at the end.

  • Add the raviolis to the cream sauce and cook for 1 minutes to help the sauce cling to the raviolis. Stir in the remaining lemon juice and basil.

  • Season to taste and finish with a sprinkle of flaky salt and fresh cracked pepper if desired.
