Usually people say prettige sinterklaas or prettig sinterklaasfeest instead of gelukkige sinterklaas. Groetjes Herman
I am not sure if Sinterklaas needs a capital letter.

Where I live, Sinterklaas greetings are not customary. It's a holiday specifically for children, so adults would most likely not exchange Sinterklaas greetings. When talking to a young child you may ask what Sinterklaas brought them or tease them asking if they've been good enough to get anything at all

I have never heard of Sinterklaas greetings of any kind either. I agree that showing interest in a child's gift would be the best option.
If you really want to say something, I'd go for prettig sinterklaasfeest. (without capital letter because it is a compound word)
