A bidder cannot bid against himself. If there is only one bidder the price ("current bid" while the auction is running, which is simply what the price would be if there is no further activity) will remain at the Starting Price unless you shelled out for a Reserve Price AND s/he bid high enough to meet the Reserve, in which case the price will be the exact amount of the Reserve Price.
There are many reasons why a sole bidder might place multiple bids. Nibbling at the Reserve. Misunderstanding how to bid. Some tactical reason to place lower bids then come back and bid higher. As s/he loses other auctions more money available to put on this one. Simply changing his/her mind. etc. etc.
