This creamy pasta makes a fantastic lunch or dinner option – serve with a side salad and dig in. You can make your own oat milk with 2 ingredients, or use a store bought oat milk (just make sure it’s unsweetened).
This oat milk mac and cheese is a fantastic savory dish that is a great recipe to use with oat milk. Mac and cheese is one of my favorite foods ever so you know I had to make this lighter version.
Oat milk is one of the best plant milks around because it’s vegan, and costs pennies to make at home. My unsweetened oat milk recipe is a fantastic step-by-step guide for making oat milk at home… or you can use store-bought oat milk which is equally as delicious!

What’s In This Oat Milk Mac and Cheese Recipe?

- Oat Milk: which you can make yourself with some water andold fashioned oats, or use store-bought. If you don’t want to make oat milk yourself, this unsweetened oat milk has the perfect texture for this mac!
- Macaroni Noodles: to make this gluten free, these awesome GF macaroni pasta noodles work perfect in this recipe. If you aren’t gluten free, then you can use normal macaroni, whole wheat, or a veggie pasta.
- Olive Oil
- Mustard Powder:for a wonderful sharp flavor, I like this mustard powder best!
- Salt: We like to usepink Himalayan sea salt.
- Pepper: like salt, I only usereally good pepper corns, I likethese tellicherry pepper cornsbecause they have a fresh spicy taste when they are ground. There are a lot of varieties but I likethese tellicherry peppercornsbest for the value.
- Cheddar or Melty Cheese:You can use cheddar, shredded cheese blends, or evencreamy Velveetafor this recipe, or another melty cheese alternative. You can use a plant-based cheese for a vegan substitute as well.
- Parmesan Cheese: for a bright and sharp finish on this mac! I love adding this parmesan cheese to my mac and cheese recipes to give it that little extra kick of flavor.
Dietary Modifications
- To make this recipe gluten free, Make sure the oats you are using are certified gluten free. While oats are naturally gluten free, there can be cross-contamination during processing, so always make sure your oats have the Certified GF stamp on the packaging if you must avoid wheat.
Make This Mac and Cheese with Store-Bought or Homemade Oat Milk!
You can absolutely use an unsweetened store-bought oat milk, or you can easily make it yourself. All you need is oats, water, a strainer, and a blender. My unsweetened oat milk recipe is here if you want to try it yourself. Or you can get oat milk at the store or this delicious version online here. How Do I Make This Easy Mac and Cheese with Oat Milk?
- Bring a large pot of water to a boil, and cook pasta according to package instructions. Drain and set macaroni aside.
- In a large pot, heat the olive oil, ground mustard, salt, pepper, and oat milk over low heat. Cook until oat milk is just bubbling, then reduce to a simmer.
- Add in the cheeses and stir well until all have melted into the oat milk. Add the cooked macaroni to the cheese sauce, taste and add salt and pepper if needed, and enjoy.

Ingredients
- 1 lb macaroni use certified gluten free if needed
- 2 tablespoons olive oil
- 1 teaspoon whole grain mustard
- 1/2 teaspoon Himalayan sea salt
- 1/4 teaspoon freshly ground Tellicherry Black Pepper
- 2 cups unsweetened oat milk use certified gluten free if needed
- 1 1/2 cups cheddar cheese *or see below Recipe Notes for my vegan cheese sauce recipe
- 8 ounces Velveeta
- 1/2 cup parmesan cheese
- Himalayan Sea Salt and Pepper to Taste
