IF you want to remove from navigation panel, do below settings:
Site administration ->Appearance -> Navigation -> Uncheck “Show all courses”
When you do the above steps, “All Courses” will still be showing under the “My Courses” blog on the Navigation. And students can still go through that to view all the courses.
Uncheck that and viola, the courses are all hidden from the students except for the ones they are enrolled in.
***Note that a brand new user to a Moodle site, who has not enrolled in any course, will see the block title as “Course Categories” in the Navigation and will be able to open that and see all the courses and will be asked to enroll.
The avoid them from never seeing that, keep them perpetually signed up to one of the courses, like the Orientation Course.

You may be able to solve the problem of needing to keep someone perpetually signed up into a course by Hiding Categories as shown below. I haven’t tried it to see if the solution is effective or not.

Hidden categories are only visible to site administrators or those with the capability to “view hidden courses”.
It's a "do nothing" option. "Disable course enrolment" When the user disappears from the external source, user enrolment is suspended (the user can't access the course, but user data and settings are kept), and roles are kept as is.
Categories may be easily hidden or shown via Administration>Site administration>Courses>Manage courses and categories and clicking the 'eye' icon of the category you wish to hide.
All activity in Moodle is logged. Pretty much all activity on the Internet is logged - it is not a matter of privacy. However, if the teacher posts the test on Moodle prior to the test, it does not seem totally fair that you would get in trouble for that.
With visible groups, students can see which other groups are doing the same activities as they are; with separate groups, they do not know which other groups are doing the same activities. Using groups with discussion forums allow teachers to restrict interaction between students.
In the upper right corner of the screen, click on the "gear" icon. From the resulting drop-down list, choose "more" to see course administration page. Select Edit settings on the resulting webpage. In the General section of the settings, click the Course visibility menu and select Show.
Go to your course homepage in Moodle. Click on the “Participants” tab near the top of the page, below the course title. Find a student who has dropped. In the Status column, there will be a brightly-colored label that says "Dropped", and to the far right of their row will be an unenroll (trash) icon.
Only if you have enrolled to Moodle course with enrolment key shared by teacher, you can also unenrol from course by yourself in Moodle: Go to the course > Select More tab (under the course title) > Unenrol me from...
Students may also see their own attendance record if the activity is not hidden. The optional Attendance block allows teachers quick access to the Attendance functionality, and allows students quick access to a summary report for their own attendance.
