My 2011 handled 200 pretty well, 250 is pushing it, this is with mangle rules and traffic shaping. 100Mbps traffic.
The hEX with the dual core is *much* tougher than that, much better CPU. I have one in place running the Dude, unfortunately no traffic going through it.

There is no clients limit in mikrotik devices but yes tunnel limit by license. Your device is Level 4 and support up to 200 tunnels of each kind (200 PPPoE, 200 PPTP, ...)
The performance depends of how device is configured (router / bridge) and how many rules (filter, mangle, ...) have created (this cause CPU usage). More rules more CPU usage.
Go to https://mikrotik.com/product/RB750Gr3 and read at bottom how many throughput gets in every configuration mode (bridged / routed)

If the question is how many clients can connect - then the answer is 100+ (almost no problem).
If the question is how many clients can use an AP at the same time & and have hi-speed throughput that is fast enough to watch high-def movies (all clients at the same time), then ... The answer is anywhere from 2 to 10. If watching ultra-high-def 4k, then cut that number by half. (these answers are for quality non-buffering error-free streaming video)

Read the topic title again- OP asked about Hex, and there's NO wireless on Hex.
