When I first set up my child’s Apple devices, I signed in to my AppleID for “media and purchases”. I now realize that I didn’t need to do this as they are all within my family sharing. We are now beyond the limit for 10 devices for my Apple ID for music and I want to have them use their own Apple ID. Will they lose their apps in this process or will everything stay since their “new” Apple ID is already in my Family sharing and has subscription permissions?

They won't "lose" the apps. Even if you sign in with a new ID the old apps will remain on a device unless you delete them or erase the device entirely. However, they won't update under the old ID so when it comes to updating them you may have to delete them and redownload them with the child's ID as part of Family Sharing. Note, in How to save apps and progress on one Appl… - Apple Community a Community Specialist says, "you will not be able to transfer the meta data from one Apple ID to another. Once you switch to another Apple ID the information associated with the old Apple ID will be gone except for physical content on the device like photos and videos."
