How to make Creamy Cucumber Salad
Peel two large cucumbers and cut them into bite sized chunks.
Thinly slice the onion and place everything into a medium sized bowl.
Sprinkle salt over the top and toss to combine. The salt will pull some of the fluid out of the cucumbers and soften them.
Cover with plastic wrap and allow to rest at room temperature for at least 30 minutes.
In the meantime, in a small bowl, whisk together the mayonnaise, sugar, cider vinegar, dill, garlic powder and black pepper to create the dressing.
Set into the refrigerator until ready to use.
After the 30 minutes has passed, stir and drain the cucumber and onions.
Pat dry with paper towels or spin in a salad spinner and then return to the bowl.
Pour the refrigerated dressing over the cucumbers and onions and stir to coat.
Refrigerate for at least 2 hours, up to 24 hours and stir before serving. Enjoy!
