It’s a holiday tradition in the TCL household to bake this most delicious Cream Cheese Spritz Cookie Recipe. I make mine with lemon zest or almond extract, lots of butter and of course cream cheese. They almost have a shortbread taste that makes them the most addicting Christmas cookie I make. Almost as addicting at my Dad’s famous Peanut Butter Fudge.

Cream Cheese Spritz Cookie Recipe

Spritz cookies are a Christmas classic cookie recipe using my favorite ingredients, butter, and cream cheese! Using a cookie press with all the different plate templates is how you make all the different shapes.

I remember being mesmerizedby the cookie press and its different shapes. I would study the packaging which showed eachdisc and what shape it would make. My favorite cookie press was an old metal one I found at a garage sale years ago and somehow, I must have misplaced it. So I bought a new one and I hate it. I’ll be investing in a new one soon.

This year I made the tree shape with green sprinkles and two other shapes that look like snowflakes and poinsettias after I added the colored sugar crystals.

How to Make Cream Cheese Spritz Christmas Cookies

Supplies needed

  1. Following the recipe, one of my secrets is to really cream together the butter and cream cheese so it’s really smooth.
  2. After you’ve mixed up your cookie batter, this is when you need to decide if you want to make colored shapes, like green Christmas trees. If the answer is yes, then divide your batter and mix in the color desired.
  3. Form cookie dough into log shapes and fill the cookie press. If the dough is too warm, you may have issues with it releasing from the press. This is when I place in the refrigerator for about 30 minutes.
  4. Press cookies onto your cookie sheet.
  5. I have found the most success by pressing and lifting directly up. The cookie should have stuck to the pan.
  6. Before baking, sprinkle for color.

FAQs

Why won't my spritz cookies come out of the press? ›

If the dough is sticking to the bottom of the press instead of adhering to the pan, it might be too soft. Place it in the refrigerator for 3 to 4 minutes and try again. Butter is highly recommended when making Spritz cookie dough.

When making spritz cookies do you decorate before or after baking? ›

If you decide to use icing make sure the cookies are cooled completely before decorating them and don't add any sprinkles before baking. This spritz cookies recipe bakes quickly so keep an eye on them, you don't want them to brown they should just be starting to turn ever so slightly golden at the edges.

What is the difference between spritz and butter cookies? ›

These cookies are nearly identical, except for one ingredient: egg.

How to get spritz cookies to stick? ›

The ungreased cookie sheet must be cold for the dough to adhere. If the dough will not stick to the pan, try placing the cookie sheet in the freezer for a few minutes. Do not use parchment paper or a Silpat mat. The dough will not stick when pressed.

Should you use parchment paper when baking spritz cookies? ›

Don't use parchment paper or non-stick cookie sheets for spritz cookies. This dough needs something it can stick to a little in order to come off the press. The cookies have so much butter in them, I've never had a problem with them sticking to a regular cookie sheet when they bake.

Why are my spritz cookies tough? ›

Simply adding the flour to the stand mixer and beating it in runs the risk of overdeveloping gluten and giving you a tough or dense cookie (not what you want after all that work with the creaming). Instead, the best method is to add the flour and mix it in by hand, stopping as soon as no dry flour remains.

Should spritz cookie dough be sticky? ›

*Perfect spritz dough has a soft malleable texture that is not too sticky or stiff. Creamed butter and sugar is the foundation of great spritz cookies.

Why did my spritz cookies spread? ›

Temperature. Dough that is too warm or soft will spread more than dough that is cooler, so if you're working in a very warm kitchen, putting your dough in the fridge for 15 minutes or longer before using it will help prevent spread. Butter that is too warm or soft is also a major culprit.

Why do my spritz cookies taste like flour? ›

Improper flour measurement is the #1 cause of your cookie dough being too dry or the cookies tasting like flour.

Can you use any dough in a cookie press? ›

You can't squeeze any cookie dough recipe through a cookie press, and that's because most are too thick to go through. Instead, you'll make a specific type of cookie called a spritz cookie.

Can you use store-bought cookie dough in a cookie press? ›

Make sure the log is short enough and thin enough to fit in the cookie press barrel. To save time, buy premade cookie dough that comes in a log shape. Avoid using cookie dough that has big pieces like chocolate chips or nuts in it. Use thin doughs like sugar cookie dough and spritz dough instead.

Why did my spritz cookies go flat? ›

Mistake 1: The butter is too soft

If this happens, the butter will melt faster in the oven and your cookies will flatten before they can set. Thirty minutes is usually enough counter time to soften butter.

What do I do if my spritz cookie dough is too dry? ›

The most obvious and easiest fix is to add more liquid. Very slowly, teaspoon by teaspoon, add a liquid that you've already included to your dough. Mix after each teaspoon—you don't want to over-saturate it and risk gooey dough. Don't overmix, because this might lead to the problem you're trying to fix!

Why are my Spritz cookies going flat? ›

The Problem: The Butter Is Too Soft

Room temperature butter is just the right consistency to incorporate air when it's creamed with sugar. These trapped air pockets result in risen, fluffy cookies. If the butter is any warmer, it won't incorporate enough air and your cookies will have less rise.

How to prevent spritz cookies from spreading? ›

Chilling cookie dough helps prevent spreading. The colder the dough, the less the cookies will over-spread into greasy puddles. You'll have thicker, sturdier, and more solid cookies. Whenever I make cookies, I plan ahead and chill the cookie dough overnight.
