My family has a bad going out to eat habit.

Not because we actually like the food we get, but with a busy household, it’s sorta a default go to. And it’s ironic because we have to drive to get the food and then home again, which of course we could practically make food in that time. I think as a parent sometimes that drive in the car where you are not playing or answering the who/what/why of childhood is a welcome retreat. No matter the reasons, in 2016 I aim to take back my kitchen in more ways than one. And to wean us slowly off of some of those habits, I love making fast food favorites at home. No, it’s not always great for you, but it does solicit a happy response from all family members and we all deserve some delicious fried chicken every now and again.

Truth be told I have a ton of favorite chicken joints. Where I live, we have Foosackleys, Canes, and of course, KFC. While I like each one of them for totally different reasons, I can’t beat the flavor of KFC original fried chicken with a side of mashed potatoes and gravy. I don’t even want to knowwhat kind of calories exist in it because its too good to care. And making it at home? Somehow it lessons the parental guilt because I can throw the words “Homemade” in front of it and thereby it’s better.

Don’t tell me otherwise, I won’t listen.

So if you are looking for a delicious and perfect COPYCAT KFC recipe, this one is great. You can mix up this spice mixture with flour and coat your chicken to fried perfection. To make it extra authentic, create some copycat coleslaw, a side of rolls and some corn. Voila- no reason to go out when the urge hits. This is also fun to serve at football parties!

Ingredients

  • Chicken – you can use breasts, thighs, drumsticks, wings
  • 2 quarts neutral oil ok for frying
  • 1 egg white
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon brown sugar
  • 1 tablespoon kosher salt

Copycat KFC Original SPICE MIXTURE:

Create and set aside in separate plate

  • 1 tablespoon paprika
  • 2 teaspoons onion salt
  • 1 teaspoon chili powder
  • 1 teaspoon black pepper
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried marjoram

How to MakeCopycat KFC Original Fried Chicken

Preheat fryer to 350º F.

Mix together spice mixture, flour, sugar, and salt.

Now dip your chicken into your egg whites till coated and stick in the flour mixture. Coat all sides well, turning as you go and making sure the flour is covering the entire piece.

Pro-tip: Be sure to slightly dry your chicken before dredging. This keeps everything from sliding off, especially the egg whites in this recipe. I use a paper towel and just blot the water off the top and bottom of each piece. Then I toss it.

Set chicken aside for approximately 5 minutes so the mixture dries on the chicken and sticks well. Now fry your chicken. The frying time will depend on the pieces you are frying, but breasts/wings take up to 14 minutes and legs take about 16 minutes.

Only fry a few pieces at a time or you’ll drop the temperature of the oil too much which can make the chicken greasy and can make that precious coating come off.

Once done, let sit on paper towel to remove excess oil and serve.Obviously, this is fantastic warm but, like KFC, it’s also fantastic right out of the fridge. If you’re feeling guilty about the chicken, pair with some veggies or healthier sides.

Also, remember to reuse your cooking oil. So long as it isn’t too dark, you can use it again for your future chicken cravings. To do so, I let it cool completely and then strain it through a layer of paper towels to remove all the bits. Then I pour it back into the jug it came in and put it in the pantry for next time.

I usually get 2 – 3 fry sessions out of each gallon jug making this even more affordable to make at home!
