I've been making this recipe for years, it is a favorite. I shred the cheddar so it doesn't melt all over my pan in clump.
Leftovers are great for omelets, fries rice, noodles, and even sandwiches.

I must have done something wrong, because there was more cheese on the baking sheet than in the loaves. Good flavor. Bake 25 minutes only!! Rest 5 minutes only or they dry out. BBQ sauce on the top worked well.

This is a great recipe and everyone in the family enjoyed it, kids included. I added some shaved carrot as well to get some more veggies in. I've made it both toasting the breadcrumbs and precooking the onion and not. It doesn't make a big difference, so you can save time by just adding store bought bread crumbs and raw onion and garlic.
My husband was shocked that the ground beef was 90/10 and there was no sausage. yet there is so much flavor and juice.

I have been making these little meat loaves for years and wanted to share how wonderful they are. I use lean ground turkey and find that they freeze well (save the ketchup topping for just before you cook them). Neither of us has ever been real fond of meat loaf, but this recipe has changed our minds.

Absolutely love this receipe. This is great for the whole family, even my 2 boys who are somewhat picky eaters love this meatloaf. I didn't alter the receipe in anyway, made it exactly how it calls for. I've made this a few times already and it will be a permenant choice in my meal planning.

These were really delicious. I substituted regular sharp cheddar, but they were still awesome. I won't save this recipe, because it doesn't beat the microwaveable Everyday Meatloaf, but it was certainly enjoyable!

Good moist meatloaf recipes. Skipped the horseradish and tasted fine. I used cracker barrel sharp white cheddar cut into 1/4" cubes and it didn't melt much, just soften cheese cubes. Next time I will diced it finer or use mozzarella.

I've made this several times. Delicious! I don't add the ketchup on top, and I use ground chicken or turkey instead beef. I'm on WW, so love that these are delicious, filling, and (fairly) low-cal. I freeze the extras--perfect for a quick dinner as long as I remember to put in fridge in the a.m.

Fabulous - I haven't eaten meatloaf in abut 20 years because my mother's version was sooooooooooooo bland and I assumed that's just how meatloaf is. I like really flavorful food and bland food is not even worth eating for me. My hubby loves meatloaf so I finally caved and let him make this. I loved it. Can't wait for the leftovers and we'll def make it again.

Very tasty. I just made a regular sized meat loaf vs. the individual loafs, cooking at 425 for 45 minutes, rest for 5 minutes. DH used the last of the horseraddish before I got to it so I substituted wasabi and it was great! The white cheddar really makes it. Served with mashed potatoes and steamed broccoli.

Awesome!!! This was my first time making meat loaf and it was so easy! I used panko crumbs in stead of bread crumbs. I probably would add slightly more cheese next time, but overall it was delicious. Made it with mashed potatoes and gravy. Can't wait to make this again!!!

These were so easy and delicious. Everyone from 10-month old baby to 3-year-old to husband enjoyed. I loved how there were 6 little meat loafs as opposed to one big one for portion control. I served with roasted asparagus and mashed potatoes.

A big hit! I made the recipe exactly as written...I think the horseradish adds a great kick. I will shred the cheese next time, to hopefully prevent all of the melting/oozing I had with the diced cheese. This recipe is a keeper!

I'm not sure why I didn't love this as much as the other reviewers... it was just o.k. Flavors didn't really come together and I followed recipe to a T. Loaves were dense and a little dry (even despite the cheese). I will take away the "mini" part - genius, really!

Sometimes I use ground lamb and sharp white cheddar, but this recipes needs nothing! It's phenomenal, I get so many compliments. I even had a friend offer to trade me ANYTHING IN THE WORLD for my "secret meatloaf recipe" I never had the heart to tell him it was a,CL recipe!

Absolutely delicious! The ingredients complement one another beautifully to create a very savory meal. Don't skip the horseradish as it adds a little zing to the meatloaves without being strong. A true family favorite!

I've never made meatloaf before because I think it's gross BUT for some reason I thought this sounded good so I tried it - to my surprise it was really great! I changed a few things to fit what I had on had. Instead of ketchup I used Cooking Light recipe New York Style Pizza Sauce and feta instead of cheddar. I have a mini loaf pan and used that to help the loaves keep their shape. Truly an easy weeknight meal - will for sure make again!

This was one of the best meatloaf recipes we've tried. I was afraid the cheese would be an issue while cooking on the broiler pan, but it remained in the loaf like it should. The only change I made in this recipe was to increase ingredients for additional servings (6 is a really odd number) & I used plain breadcrumbs instead of adding the extra step of making fresh ones & then toasting them (unnecessary complications). They turned out moist & got the approval of my boys, so I'll definitely do these again. 2nd note: prepped 2nd time with extra sharp cheddar, but most of this did ooze out during cooking; will stick with white cheddar which doesn't seem to melt as much.

This recipe is outstanding even with the horseradish. I used less than what the recipe called for. My 7 year old daughter has not liked a meatloaf I've cook and I've tried several meatloaf recipes, even the brown sugar one. She loved this and even asked for more. I'll be making this on a regular basis for the family.

this recipe is a new favorite in our household. I've made this ahead of time in the morning and keep it covered in the fridge until time to cook. Since we are big mushroom fans in our household, it nice to add some sliced baby bellas into the mix. I was a little hesitant about using the horseradish but it's the perfect addition to the combination of flavors.

These were delicious. My adult daughter loved the idea of having her own personal mini meat loaf. I couldn't find white cheddar, so i used a low fat cheddar/jack cheese crumble mix that I found in the deli section. Served with garlic mashed potatoes and green beans & carrots.

Very good & very easy. Subbed 3/4oz dry breadcrumbs for fresh and used reduced-fat sharp cheddar. Also fresh oregano instead of dry. Combined all the wet ingredients, vegs & herbs before adding the crumbs & meat to avoid overworking the sirloin. Served with steamed carrots, wilted spinach & smashed yukon golds -- terrific winter dinner.

Possibly the best meat loaf I have ever had. I used 2 lbs of ground beef, but used the listed amount of everything else. I had no fresh bread on hand, so I used panko bread crumbs, and added three shakes of Worcestershire sauce. I'm not a big fan of baked on ketchup, so I left that off (although, I may try a little BBQ sauce next time). Served with a brown rice medley, and a simple salad of tomato, cucumber, and shaved carrots.

This meatloaf recipe was delish...didn't want mimi loaf's so made just one large..regular loaf..cooked for the normal 1 1/4--1 1/12 hours...out standing... Still don't understand why some where without fresh breadcrumbs...It this simple..1-2 slices fresh bread..your choice...put in the food processor..pulse for desired time to make bread crumbs...Toast for a few minutes to brown them up...not dry them up.. fresh bread crumbs are not dried bread crumbs..

I made this with 1 1/4 pound of lean ground turkey breast. Also used reduced fat cheddar cheese. For the breadcrumbs used 1 oz of panko. They turned out very moist and delicious. Adding in the horseradish made it more tender and flavorful. If I added the calories right they are only 101 calories each. I am sure a lot less fat too! Makes room for those 80 calories Betty Crocker Garlic Mashed Potatoes! Yum! Give it a try if your trying to cut those calories. :)

This is one of the best meatloaves I have ever tasted. I tweaked it a bit to suit our tastes. I doubled it and added 1 1/2 lbs ground pork. I like the flavor of beef and pork (not pork breakfast sausage) in a meat loaf. Tripled both cheeses and the garlic, also added more salt. Never, never would I have thought to put horseradish in a meatloaf but from now on it's going to be a requirement. I grow and grate my own horseradish and like it on a lot of things. Instead of making mini loaves I made one large loaf and baked it in the oven in a baking dish as usual. We had it with home made mac and cheese and green beans with bacon and caramelized onions. It made great sandwiches, in fact that's what I'm having for breakfast right now as I write this review. A great spread for a meatloaf sandwich is a 50/50 mixture of ketchup, home made mayonnaise then add mustard to taste.

I love this recipe. I made them for a large family dinner, half with cheese and half without, and everyone loved them. I think the horseradish and mustard, along with the cheese, gave it a bit of a different taste than the standard meatloaf, but still very much comfort food. I didn't have a broiler pan, so they "rested" on a baking rack before I served them. Easy to cook for a crowd.

I'm not sure what I did wrong, but I found this recipe underwhelming. Despite the mustard and horseradish, it's pretty bland. I liked the cheese add-in but will probably just add cheese to a different recipe in the future.

I absolutely love this recipe!! It was so flavorful, and my husband who is very picky went back for seconds!! I followed the recipe exactly, and it absolutely does not need to be changed!! It gives you that taste for comfort food, yet allows you to be calorie-conscious...especially if you are on a low-calorie diet. Thanks!!

This was very good. I'm normally not a huge fan of meatloaf, but this recipe might have made me one. I did just make it into one loaf, baked at 450 for 15 minutes & then 325 for another half hour, and it turned out very moist and tasty. Other than that, I pretty much followed the recipe exactly except to use panko instead of fresh breadcrumbs, and I left out the horseradish as I didn't have any but I bet it would have been even better with that included. I'll definitely make this again!

This recipe is so delicious, it doesn't need ANY tweaking. After making this once, I found myself craving it so it's definitely been added to my recipe "go to" list. I often use dry breadcrumbs because I have them on hand and it's quicker. Also, if 1 1/2 pounds of ground beef is too much for you (there's only 2 of us in my family!) then I've just used 1 pound of meat and cut the other ingredients back by 1/3. Serve on top a bed of mashed potatoes and wilted spinach. So good!

This was delicious! I used ground turkey. Loved the taste of the horseradish and cheese. To make it more kid friendly in the future, you could easily leave out the horseradish but it does add such a wonderful flavor!

I loved this recipe I'm from the UK where meatloaf isn't a traditional meal and didn't know quite what to expect but it was a real hit with all the family....I took a couple of tips from other reviews I chopped the cheese into cubes which was great treat when you found a little gooey bit I added an extra egg (I was going to add the mushroom soup too but thought they would have been too runny to mould)and made them up in the morning which is a great idea for when you arrive home from work hungry and they took no time at all to make up...will definitely be making them again !!

This was delicious with the flavors of the horseradish and mustard coming through just slightly. I doubled the recipe to take 1/2 to 92 year old mother-in-law, and our half was eaten in two days. I added 1 more egg and a can of mushroom soup, as I always do with meatloaf, to soften the texture--so it wouldn't be a brick. Might not have needed to do that with this recipe, as it turned out a very nice texture. Very good--will definitely make again.

A family favorite, this has become a regular dish out our home ( and tastes good for lunch the next day too) I omit the horseradish. I make it up in the morning and leave it in the fridge, or freeze until later in the week. Just need to bake when ready. This has become our standard meatloaf recipe.

Love this recipe. I drop the Horesradish and add green pepper to the onion/garlic saute mix. I also cut the cheese into bigger pieces and then push them into the formed meatloaf just before putting in the oven. This lets the cheese ooze out and brown up a little. My family loves it and we have on a regular basis. Can't go wrong with this one. Outstanding.

I love meat loaf and these were much better than a traditional single loaf. Not only were they tasty, but the individual servings were great for leftovers. Be prepared to move quickly with the breadcrumbs because when they are done, you need to get them out of the hot pan. Fantastic meal!

Awesome - DH and DS loved it and asked me to add it to the meal rotation. I ended up making them a bit larger due to the amount of meat on hand. I also added worchestershire sauce. Otherwise I followed the recipe and we all loved it.

Absolutely the best meat loaf! I used a very sharp white cheddar and it was so good. The portion size is perfect, and substantial. I did not use fresh bread crumbs, but used toasted panko instead. I also left out the horseradish, because I did not have any. I did not miss it, but my sister also made the recipe and did use horseradish and said that it really gave it a lot of flavor. Next time, I will add it in.

LOVED these! Couldn't be any easier - just throw in a mixing bowl and shape the patties. The cheese added a richness and the horseradish was also a great addition because it mellowed out the sweetness of the ketchup. When you heat these up the next day, they get that awesome crunch on the outside which gives it a great texture. I made it with the recommended salad and that was easy and delicious as well.

These were very tasty, even leaving out the onions as requested by my daughter. I added quite a bit of onion powder and extra chopped garlic to offset, but then she and my husband did not like the size of the garlic - recommended mincing the garlic. To me, it all tasted great as is! Served with a roasted butternut squash/onion mixture and steamed fresh broccoli tossed with lemon pepper. Yum!

I thought this was a wonderful meat loaf recipe. I loved the mini loaves. My 13 year old told me I should leave the ketchup off the top. When I told her I like ketchup on top of meat loaf. She said, "it makes it taste like it has horseradish in it. I only like horseradish in cocktail sauce". Just made me laugh...next time I guess I'll use the "kid tweak" as suggested in the recipe.

I made this but adapted it to make a traditional one-piece meat loaf in the pan. Just make the recipe and put it in the pan, spread ketsup over it and bake at 350 degrees for an hour. The aroma is wonderful and it is one of my girlfriend's favorites.
