This Bacon Spinach Quiche With Mozzarella Cheese is a savory, tasty combination of eggs, bacon, cheese, onion, and spinach all baked together in a flaky pie crust for a delicious and filling breakfast that your family will enjoy.
A good, savory quiche is one of my favorite breakfast dishes to serve, especially if I have company or it is a special occasion. There is just something irresistibly tasty about the combination of egg, cheddar cheese, and bacon in a flaky pie crust. Not only is it delicious, but it is served in one dish and is very hearty and filling, so it makes a great stand-alone meal.
This Bacon Spinach Cheese Quiche is simple to make. The hardest part is waiting for it to come out of the oven so you can eat it! You can use a refrigerated or a homemade pie crust – if I’m in a hurry, I always reach for a Pillsbury crust. You’ll layer your ingredients in the pie crust, then pour your egg mixture on top and top with cheese. Once it has baked and cooled, you’re ready to eat your delicious quiche!
How to make Bacon Spinach Quiche
I personally like a homemade pie crust but if you don’t have time to make one you can always grab a pre-made one from the refrigerator section at the grocery store. If you have time to make a homemade pie crust I will have a link up within the next day or two for my very favorite pie crust.
Preheat oven to 375 degrees.
If you are using a homemade pie crust roll out dough on a floured surface, if you are using a premade crust unroll dough on a floured surface, using a rolling pin, roll out any creases in the dough. Place 9″ pie pan upside down on dough. Use a knife and cut at least 2 inches around pan. Fold dough into quarters and place in pie pan. Carefully unfold dough in the pan. Once the dough is evenly spread in pie pan cut any extra dough around the edges. I like to do a crimping pattern around the edge. It’s super easy and add a pretty design.
Whisk together eggs, half & half, salt and black pepper.
Layer in pie crust bacon, mozzarella, spinach, and greens onions.
Carefully pour egg mixture over bacon, cheese, spinach, and green onion layers.
Sprinkle remaining cheese over egg mixture.
Bake for 40-45 mins. or until middle is set.
Can You Freeze Quiche?
Yes, you can freeze quiche. I like to make them in batches so that I have one for later. Before freezing allow quiche to completely cool down. Then cover in several lays of plastic wrap to prevent freezer burn. It will last in your freezer for up to 2 months.
How To Reheat & Store Bacon Spinach Quiche
While I like to enjoy this quiche when it is fresh, it also tastes good leftover. To store leftover quiche, make sure that it is in a sealed, air-tight container and place it in the fridge. It will last for up to 3 days if stored properly. Reheat individual portions in the microwave for 2 minutes or until warm. You can also reheat this quiche in the oven. Place it in an oven-safe pan and bake it at 350 degrees for 20 minutes or until warm.
This quiche also makes a great freezer meal! Once it has completely cooled, make sure that it is tightly covered in a sealed container and place it in the freezer, where it can stay for up to 6 weeks. When you are ready to eat your bacon spinach quiche, let it thaw completely in the fridge, then bake at 350 degrees for 20-25 minutes.
Popular Substitutions & Additions
- If you want to add a little more texture to your quiche, add in some finely chopped bell peppers.
- This dish pairs well with a side of sour cream, and even a side of salsa for an extra kick.
- Feel free to substitute your favorite kind of cheese in place of the mozzarella. Just make sure that you choose one that bakes well.
- Turkey bacon can be used in place of pork bacon.

Can I use egg whites instead of eggs?
Sure, for this quiche, you can use egg whites instead of eggs. You will want to double-check the measurements so that you are using the equivalent of 6 eggs.
Can I use canned spinach instead of chopped, fresh spinach?
For this bacon and cheese quiche, you’ll want to use fresh spinach. There’s just something about the texture that isn’t the same when you use canned spinach.
Will the egg mixture make my pie crust soggy?
Nope! Because you have layered your solid ingredients, they help keep your crust from getting soggy. The eggs also cook so quickly that the liquid mixture doesn’t have time to soak into the crust enough to make it soggy.
Can I top this with another crust?
No, you’ll only want to use one crust for this recipe. Another crust on top may keep the ingredients in the filling from cooking all the way through.

Ingredients

- 6 eggs
- 1 cup half & half
- ½ tsp. salt
- ¼ tsp. black Pepper
- 1 cup cooked bacon
- 2 cups shredded mozzarella cheese
- 4 tbsp green onions
- 1 cup thinly sliced spinach
Instructions
Preheat oven to 375°
Place pie crust in a 9" pie plate. You can also crimp the edges if you want a fancier finished look.
In a large bowl add 6 eggs, 1 cup half & half, ½ tsp. salt, and 1/4 tsp. black pepper. Whisk together.
Layer 1 cup bacon, 1 cup mozzarella cheese, 1 cup thinly sliced spinach, and 4 tbsp. green onions in pie crust.
Carefully pour egg mixture over bacon, cheese and onion layers.
Sprinkle remaining 1 cup of mozzarella cheese over egg mixture.
Bake for 40-45 mins, or until cooked all the way through. To check quiche poke the center of it with a wooden tooth pick. If it comes out clean it is done. Remove from oven.
Let stand for 5-10 mins. before serving.
Notes
- When cooking multiple quiches add 15 – 20 minutes to the cook time.
- Let cool for 10 minutes before serving.

I absolutely love quiche, but had never made one of my own until now. This recipe was so easy to follow and absolutely delicious!!I recommend using a deeper pie dish to ensure you have enough space for the filing. I upped the amount of green onions for my personal preference.
10/10 recommend and I’ve already shared it with numerous family members. This will definitely become a staple.

I was craving quiche & made this recipe. I made the mistake of trying to use frozen spinach instead of fresh. The quiche was delicious until you took a bite of the spinach that had settled to the bottom. It tasted nasty! Never again!-

Yes, you can make it the night before. The only thing that I would warn you about is it can make the crust stick to the pan.

I love making this quiche with a little modifications. I use a little more egg, a little less heavy cream and sub a shredded swiss/gruyere mix from Aldi. It gives it a little more of a savory taste and an amazing crusty cheese layer on top!-

I’m excited to try this recipe, but in other quiche recipes the pie crust is partially baked with a heavy aluminum foil or parchment paper and hard beans or rice placed on top of the foil. to prevent a soggy crust! Please can you explain why you dont recommend doing that.?
