Aloo Capsicum Masala Curry, another simple and easy to make dry curry that is an awesome combo for Chapati and also for Rice. These Potato and capsicum are some veggies most of us surely have a stock in our refrigerator. Its pretty quick to make even for the beginners and for bachelors. Adding capsicum to any dishes enhances the flavor. I love adding capsicum to sambar. Also in Paneer dishes.
For roti’s we always make some kind of dal or gravies like Paneer Butter Masala or Veg kurma. But most of us love simple plain dry curries like Aloo PattaGobi, Gobi Masala Curry, Aloo Jeera etc. Aloo Curry is always a favorite for most of us. But instead of plain aloo curry, we can increase the flavor by adding Capsicum (Green Bell Pepper) along with masala. This Aloo Capsicum Masala Curry is not only a best accompaniment for Roti but also best for any variety rice like Tomato bath, Vangi bath, any Pulav varieties like Green Peas, Brinji rice etc.

Notes:
1. Please adjust the quantity of spices as per your need. I like mild masala so have followed this
2. Do not overcook capsicum. Capsicum should always be little crunchy then only it will taste good and will look appealing
3. First cook the potato till and when they are half cooked, add capsicum. Just sprinkle very little water and cover & cook

Ingredients
- 3 Potato cubed
- 1 Capsicum cubed
- 1 Onion Big, finally chopped
- 1 Tomato chopped
- 1 tbsp Ginger Garlic Paste
- 1/4 tsp Turmeric Powder
- 1/2 cup Water
- 1/2 tsp Red Chili Powder
- 1/2 tsp Coriander Powder
- 1/2 tsp Cumin Powder
- 1/2 tsp Garam Masala
- 1 tbsp Kasoori Methi (Dry Fenugreek Leaves)
- to taste Salt
- for Garnishing Coriander Leaves chopped
For Seasoning
- 2 tbsp Oil
- 1 tsp Cumin Seeds
Instructions
Heat oil in a pan. Add cumin seeds and starts to sputter. Add ginger-garlic paste and saute for a minute
Then add chopped onions and saute till it is translucent. Then add chopped tomato and mix well.Add turmeric powder.
In 1/2 cup of water, add red chili powder, coriander powder and cumin powder and stir well and it to the masala. This 1/2 cup water will help cook the tomato and onion mixture and also all the powders would be nicely mixed with onion-tomato mixture. Cook till tomato is mushy
Add salt. Also crush the kasoori methi and add it to the masala.
Add cubed potatoes and mix well. Also add capsicum pieces and mix well
Then cover the pan with lid and cook in medium flame, mixing occasionally to make sure the masala is not getting burnt in the bottom of the pan and also cook till the potatoes are soft
Finally once the potatoes are cooked, add garam masala and mix well. Finally garnish with coriander leaves.
Serve the delicious Aloo Capsicum Masala Curry and enjoy with roti / rice etc
