With a birthday that just passed and my slowing metabolism, I’m finding that I can’t burn off a cheeseburger as quickly as I did 10 years ago. But thankfully enough, these hearty salads come in super handy at times like these. Best of all, they’re all so quick and easy to whip up!

I must say, “THANK YOU SO MUCH!” I am needing to go back to eating salads again for health reasons–doctors orders. High cholesterol and high blood sugar are in my blood panel. So, I get tired of the same old salad. However, at you did here gives me SO much insight on what can be done with simple, healthy ingredients, that I can mix things up and have a variety of different flavors and ethnic flavors as well. I’m a HUGE cilantro fan, so I’m just in “awwwwwww.” The Harvest Cobb Salad is new to me, so that is a must try. The Southwest Salad is one that I am doing today. I’m heating my Black Beans and soaking my roast’in ear of corn right now! Thank you again, Chungah. 🙂

This recipe is delicious! and easy to make! I made it for a family get together later today. Hope you don’t mind but I made a couple of substitutions- used fresh basil instead of thyme and used lemon olive oil. My husband thinks it is a keeper and our go to salad for the summer. Thanks for posting.

I am always on the go and chopping up salads and all that just sounds so tedious! That is until I discovered the mason jar trick. Put the salad toppings in the bottom of the jar (onions, tomatoes, almonds, etc.) and then stuff the remaining space with whatever leaf you’re using. Seal and store the jars in the fridge. Will stay fresh for up to two weeks! Easy to grab and take with you. When you empty the jar on to the plate it becomes a perfect salad.

I have been making one of these salads each night as part of scaling back on carb-heavy meals and sweet snacks after Christmas. I have three fussy eaters and each dinner someone has said “this is the best salad I’ve ever had.” The dressings really make the salads special. Nice job. Thank you.

BBQ chicken salad, ahhh! Must… make… immediately! It’s been too long since I’ve had a proper BBQ chicken chopped salad of sorts. New England food is… lacking, to say the least.
